The Pioneer Woman’s ‘Vacation Meals’ Are Perfect for When You Don’t Want To Waste Time in the Kitchen
When you’re on vacation with friends or family, the last thing you want to do is waste any precious time in the kitchen preparing meals. But eating out for every meal is also not always so feasible. So, Ree Drummond (a.k.a. The Pioneer Woman) has come up with a handful of quick and easy meals that take no time to prepare and feed a crowd. This means that you can whip them up, feed the group, and get back to the fun and relaxation in a snap.
Here are three vacation meals from Drummond that you’ll want to keep in your back pocket for your next getaway. They’re so delicious and perfect for feeding a crowd.
Sheet Pan Pancakes
Drummond’s Sheet Pan Pancakes recipe is perfect for making sure no one leaves the table hungry. You prepare a pancake batter as usual — combining flour, sugar, baking powder, baking soda, and salt in a large bowl and buttermilk and eggs in a smaller bowl. You then mix the wet ingredients with the dry ingredients, along with melted butter and vanilla.
But rather than cooking the pancakes individually in a pan, butter a sheet pan and pour the batter onto it. Sprinkle blueberries, strawberries, chocolate chips, or other toppings on top and then bake the pancake pan until it’s golden brown. Cut your pancakes into squares and serve with butter and maple syrup.
Brunch Charcuterie Board
For brunch or lunch, serve up Drummond’s biscuit charcuterie board dotted with all of your brunchtime favorites. Like a traditional charcuterie board, this one is filled with stackable ingredients, but this time they’re all breakfast-sandwich specific. Drummond likes to decorate hers with hard-boiled eggs, ham, bacon, brie, and cheddar, and fill ramekins with pimento cheese, cream cheese, apricot jam, raspberry jam, butter, mustard, honey, and herbs. Then you can include fruits and vegetables in the leftover spaces. So yummy and there’s something for everyone!
Pizza Bagels
Then, for lunch or dinner, whip up a batch of Pizza Bagels. Great for kids and adults, these delicious mini pizzas are totally customizable, so everyone can build exactly what they want. Arrange bagel halves cut-side up on a sheet pan, spreading marinara on each of the open faces (you could opt to use alredo or pesto instead, if you want a white pizza). Add mozzarella, pepperoni, prosciutto, parmesan, and whatever other toppings you want on your pizza. Bake the bagel halves until everything is melted and browned, and you’re ready to serve.
