When you think of Baked by Melissa, I’m willing to bet a mouthwatering image of teeny tiny cupcakes appears in your mind. You know, the poppable little bites you stress-eat in threes at a birthday party and tell yourself count as one. But in the tastiest possible turn of events, the queen of mini cupcakes is taking things in a more savory direction this year with a brand new collab with Blue Apron. The Baked by Melissa and Blue Apron collab rolled out in two waves, with the first batch dropping January 26 and the second on March 2, 2026. The collab features six family-friendly, nutrient-dense, weeknight meals that all come together in 30 minutes or less. The meals are built around Melissa Ben-Ishay’s famous flavor philosophy: bold, bright, unapologetic. Think miso. Think tahini. Think the kind of sauces that make you want to lick the bowl, which, at home, you absolutely can.
Because this dreamy collab sounds almost too good to be true, we had to test it out ourselves to see if it tastes as incredible as it looks.

First, a word on the experience of actually cooking these. Blue Apron’s kits arrive with everything pre-portioned—which, if you’ve never used a meal kit service, feels borderline too easy until it’s 6:45 p.m. on a Wednesday and you’re extremely grateful to not be measuring tahini. The instructions are written for real humans and real families, not chefs. And the flavors here feel unmistakably intentional, less “generic chicken dinner” and more “someone who cares deeply about food designed this.”

Do I need a subscription to try them?
Nope. Last year, Blue Apron did away with its subscription-based model and replaced it with a much more flexible alternative. Now, you can simply browse the Blue Apron menu, order as many meals as you want, select a delivery date, and enjoy the ease and quality of Blue Apron meal kits without having to maintain a subscription.
Are they family-friendly?
Yes! Although they are probably best suited for families with teens or more adventurous young eaters. The recipes are packed with rich, bold flavors that might be a tough sell for picky eaters. But assuming your family enjoys vibrant and sometimes dramatic flavors, these balanced and nutritious meals make excellent weeknight dinners.
How do they taste?
Ah, yes. The most important question. Are they actually any good? We tried three of them to find out.
Garlic Panko Chicken & Kale Salad with Roasted Veggies, Cooked Brown Rice & Tahini Dressing
Rating: 10/10
This one surprised us the most. The panko crust on the chicken gets genuinely crispy—not sad, soggy, or cardboard-y. The tahini dressing does the heavy lifting across the whole bowl and ties the entire dish together. The baby kale is actually pleasant to eat, rather than a nutritional penance, and the roasted veggies make this feel elevated and sophisticated. Honestly? I wouldn’t change a thing about the recipe.
Rainbow Crunch Salad with Corn, Cabbage & Miso Vinaigrette
Rating: 9/10
The most colorful, joyful, and slightly surprising dish in the Baked by Melissa x Blue Apron lineup is, without a doubt, this rainbow crunch salad. The miso vinaigrette has an umami depth that makes you wonder why every salad dressing isn’t miso-based. The cabbage and carrots give it serious crunch, and the “rainbow” element is genuinely pretty on the plate. It’s lighter than the other two we tried, which makes it an ideal counterpart if you’re mixing and matching across a week. If I were to order it again, I would add one of the protein options Blue Apron offers, but it’s still delicious on its own.
Smoky Romesco Baked Salmon with Smashed Baby Potatoes & Green Beans
Rating: 10/10
Romesco, the smoky, nutty, brick-red sauce, deserves more real estate on weeknight tables, and this dish makes a convincing case. The salmon bakes into it in a way that feels almost braise-y, deeply flavored throughout. The smashed baby potatoes are crispy outside, fluffy inside, a textural win. The green beans are simply done, which is exactly what you want when choosing something to accompany such bold flavors. Out of the three dishes we tried, this one is the most dramatic, in the best possible way.
The bottom line
What makes this collab work is that it doesn’t try to be something it’s not. These are weeknight meals with a strong point of view, not fine dining approximations. The Baked by Melissa DNA is there in the brightness of the flavors, the color of the plate, and the sense that these recipes were crafted by someone who genuinely wants you to enjoy this.
