This New Creamy Pasta Creation From Giada De Laurentiis Includes an Entire Meyer Lemon (Rind Included!)
Nothing screams “bring on summer” quite like a blast of citrus, and Giada De Laurentiis’ brand-new pasta recipe is that citrus blast you’ve been craving (and more!). The recipe calls for an entire Meyer lemon — with the rind included — and is so delicious that you will be tempted to make this dish once a week. It’s about to become your new favorite summer go-to, and because the sauce comes together off the stove, it’s perfect for those hot summer nights.
“So this is my new creation, and I’m calling it Pasta Alla Giadzy,” De Laurentiis said in a recent Instagram video. “And it’s basically a homemade lemon alfredo, using a whole Meyer lemon.”
To make the dish, you first start by toasting almonds and adding them to a food processor along with cloves of garlic. Pulse them together until combined before adding in your entire Meyer lemon that has been cut into smaller wedges. Pulse again until finely chopped, then add in ricotta, heavy cream, chili flakes, Parmesan cheese, olive oil, and salt, pulsing once more. Then move the mixture to a large mixing bowl.
Cook your pasta until al dente and then drain, reserving a cup or so of pasta water as you do so. Add your cooked pasta to the mixture, adding more Parmesan cheese, and stir. You can loosen the sauce with a bit of pasta water, but keep stirring until the sauce is glossy. Serve immediately, and you’ve got yourself a hit!
