The 3 Comfort Food Recipes From Ina Garten You Need To Make Before Winter Ends
We are definitely still firmly planted in comfort food season, and if you’re not taking full advantage of the cold weather by making hearty, delicious dishes while you can, then that needs to change now! Ina Garten has so many great comfort food recipes up her sleeve, and we found three of them that you have to try before winter is over. They’ll warm you from the inside out and make you forget about the cold and snow outside as soon as you take your first bite.
Chicken Stew with Biscuits
Any meal served with biscuits is going to be comforting, but Garten’s Chicken Stew with Biscuits is a must-have on your winter menu. You make it entirely from scratch, starting by roasting chicken breasts and removing the meat and skin when cooled. Then, you’ll heat your chicken broth in a saucepan while creating a roux in your Dutch oven by sautéing onions, butter, and flour before adding the chicken stock to the Dutch oven. Once everything is starting to come together, add in your cooked chicken, as well as carrots, peas, onions, and parsley, then bake the stew for about 15 minutes while you make your biscuits.
Once the biscuits are made, remove your stew from the oven and place the biscuits on top of the filling, returning them to the oven for another 20 minutes. When the biscuits are brown and the stew is bubbling, you’re ready to eat.
Truffled Mac & Cheese
As if macaroni and cheese in itself isn’t comforting enough, Garten’s savory Truffled Mac & Cheese is on an entirely different comfort food level. To make it, you’ll first sauté shitake and cremini mushrooms in butter until tender, adding a bit of sherry at the end for the mushrooms to absorb. Scald some milk in a separate saucepan and create a roux using white truffle butter (Garten likes Urbani), pouring the milk in when the flour and butter have come together. Off the heat, add in Gruyère, Cheddar, salt, pepper, and a pinch of nutmeg.
Combine the cheese sauce with your cooked pasta and pour the mixture into a baking dish, topping it with bread, garlic, and parsley crumbs. Bake the mac and cheese for about 45 minutes, and then serve hot — you’ll be blown away!
Weeknight Bolognese
This beginner-friendly weeknight comfort meal is so easy and delicious, you’ll find yourself making it once a week. To start, brown ground meat of your choice in a skillet, adding in garlic, oregano, and red pepper flakes, as soon as the meat begins to lose its pink color. Add a splash of red wine to deglaze the pan before adding crushed tomatoes, tomato paste, salt, and pepper.
While your pasta cooks in a pot of boiling water, add nutmeg, basil, cream, and more red wine to the sauce, stirring occasionally until the sauce has thickened. Add your pasta to the sauce and sprinkle everything with Parmesan cheese. Dinner is served!
