Global dining hall Maydan Market brings Filipino-Soul fusion food with SoulPhil pop-up
Inspired by her world travels and the time she spent walking through international food markets, renowned chef Rose Previte launched Maydan Market to build a global village of food with a roster of restaurants focused on international cuisines with an L.A. touch. It’s all housed under one roof in the West Adams area with one spot reserved for a rotating residency.
That residency will now take diners through the Philippines with a touch of American soul as the respected SoulPhil pop-up, which was founded by Los Angeles native chef Tiana Gee, moves into the rotating spot dubbed Club 104.
“Chef Tiana has an amazing personality and she is doing something very similar to what I’m doing at Maydan. I preserve my culture through food and try to explain the Middle East to people through feeding them, and she does the same thing. One of her parents is Black and one is Filipino and she represents Southern food culture with Filipino food,” said Previte, who opened the 10,000-square foot Maydan Market in October.
Gee was the former sous chef at Harlem’s renowned Red Rooster. She has been featured in Bon Appetit and Epicurious, and starred in Food Network’s “Chopped Next Gen,” “Ciao House,” and “Beat Bobby Flay.”
Her SoulPhil Filipino-Soul fusion food will be at the market through early March and will include signature dishes such as the Macapuno cornbread with coco butter, gumbo collard green lumpia with spicy suka, Crispy Hoppin’ John fried rice and the Coco Nana Puddin, made with banana leche flan and Nilla Wafers.
SoulPhil marks the sixth residency at Maydan, where Previte hopes to share the culinary adventures she experienced while living abroad a few years ago.
“It was really influenced by travels around the world. I was left with this amazing impression in all of the great cities of these market places,” she said. “It’s always a place of commerce where you can buy things you need for home but you can also buy a meal. It’s very exciting, it’s very fun and every part of the world has it except for North America.”
“I think America made it like a food court in the mall. So we really wanted to create a beautiful space where people can come together and eat,” Previte said.
While the pop-ups rotate, Maydan is anchored by several respected spots including Previte’s replica of Middle Eastern flagship restaurant and bar Maydan, plus her international street food inspired Compass Rose, as well as Golden Mountain Fried Chicken, Oaxacan fire-cooking spot Lugya’h by James Beard Award-nominated Poncho’s Tlayudas and coastal Afro-Mexican spot Maléna. There’s also a market named Sook, which sells products from Middle East and North Africa including food, ceramics and linens.
And next up in her rotating spot is Baloot, a Persian pop-up which is set to open March 10 and will offer something new for many diners.
“It’s very cool, It’s like Persian rice bowls. I’ve never seen that,” Previte said.
