The Pioneer Woman’s Dark Chocolate Lava Cakes With Raspberry Whipped Cream Are Beyond Decadent
A little bit of decadence can go a long way and turn a day from just good to great. And Ree Drummond (a.k.a. The Pioneer Woman) has one of the most decadent dessert recipes in her arsenal. They’re personal lava cakes topped with raspberry whipped cream, and they’re about to become your new favorite dessert. You know a treat is going to be beyond delicious when the first ingredient on the list is a stick of butter.
To make Drummond’s lava cakes, start by adding a stick of room-temperature butter to a glass bowl along with chopped bittersweet chocolate. Melt the butter and chocolate together in the microwave, and to that add powdered sugar, eggs, egg yolks, flour, and vanilla to create a creamy chocolatey batter.
This batter goes into individual custard cups sprayed with baking spray that are then baked for just about 11 minutes — remember, you want that ooey-gooey chocolate center.
While those are baking in the oven, you can prepare a bit of raspberry whipped cream. Just beat heavy cream and a couple of tablespoons of raspberry preserves with a stand or hand mixer until soft peaks form. That’s it!
You don’t have to wait for your cakes to cool before serving. Invert the custard cups onto dessert plates and pray to the sweet treat gods that they come out of the cups in one go (you can also eat the cakes right out of the cups, if you prefer!). Top them each with a spoonful of whipped cream and dive into the deliciousness.
