Glens Falls restaurant opens new location in Slingerlands
SLINGERLANDS, N.Y. (NEWS10) -- A Glens Falls farm-to-table restaurant is opening its second Capital Region location. Mint is opening in the former Garden Bistro 24 space in Slingerlands and is having its soft opening on Tuesday, April 1.
Mint is owned by Johanna Geldern, along with her daughters Katriel and Cagney Houlihan. In November, Garden Bistro 24 announced it was permanently closing and Mint would be moving into the space.
"The owner of Garden Bistro 24 and his wife were customers at our Glens Falls location and approached us about transitioning the space to a Mint," Geldern told NEWS10. "They were looking to step away due to family obligations, and we came to an agreement where we would take over the space and lease it from the owner of the building."
The Glens Falls location opened on Warren Street in 2022. Mint offers farm-to-table meals with gluten-free, vegetarian, and vegan options.
"The Slingerlands location will mirror the same farm-to-table, scratch-made menu as Glens Falls," said Geldern. "We use fresh, organic ingredients, and source locally whenever possible."
For both restaurants, Thom Hines is the executive chef and Kate Sartin is the kitchen operations manager. She also handles dessert, specific menu items, retail, and farm relationships and ordering, said Geldern. The Slingerlands head chef is Caitlin Sive, formerly of Nighthawks in Troy.
Dishes included on the Mint menu include a cheese board, buffalo cauliflower, chicken schnitzel, pasta, burgers, and craft cocktails. You can view the full menus on the Mint website.
As for future expansion, Geldern said they are looking to buy a farm within an hour of both locations. "Our vision includes hosting weddings and events, building a commercial kitchen for our growing retail division, and possibly adding on-site lodging so guests can stay and experience the farm life firsthand," she said.
Mint in Slingerlands is currently hiring a line cook and a bartender/server. Geldern said they'd also like to connect with any Capital Region farms who might want to collaborate with them.
The Slingerlands location will have limited hours during its first week. Starting April 8, the restaurant will be open Tuesday through Thursday from 1 p.m. to 8 p.m. and Friday and Saturday from 4 p.m. to 9 p.m. "We’ll likely expand our hours further — possibly adding lunch and more days — once our team is fully trained and patio season begins in mid-May," said Geldern.
Reservations for Mint in Slingerlands can be made on the Resy website. The restaurant is located at 5 Vista Boulevard.
