Salt & Straw continues suburban expansion with Bridgeport Village scoop shop
PORTLAND, Ore. (KOIN) — The Portland-founded ice cream chain known for eccentric flavors is continuing to expand to the suburbs.
On Monday, Salt & Straw announced its plans to open a location in Tigard’s Bridgeport Village. The scoop shop will be the company’s eighth location throughout Oregon and third in the Portland suburbs, joining existing shops in Beaverton and Lake Oswego.
Salt & Straw has also expanded to other states including California, Washington and New York since its founding in 2011. Since then, the chain has welcomed notable guests like then-Vice President Joe Biden and partnered with Dwayne “The Rock” Johnson. The actor acquired an ownership stake of the brand in 2019.
Kim Malek, who co-founded Salt & Straw alongside her cousin Tyler Malek, said the company’s newest addition has “such an exciting future ahead.”
“The investments that have recently been made in the center are creating lively energy and reputation as a destination for community gathering,” CEO Malek added in a statement. “We are excited to invest more deeply in Portland with this new scoop shop!”
As part of a shopping center, the Tigard location will neighbor other local and national businesses like Straightaway Cocktails, Tender Loving Empire and LuluLemon.

The ice cream chain hasn’t revealed the opening date of the 1,370-square-foot scoop shop, but it will be open daily from 11 a.m. to 11 p.m. Company leaders plan to hire around 20 workers for the new location.
