I lost 100 lbs – my new favorite recipe is for healthy nachos, it’s yummy and quite filling
ONE home chef has found a way to stay slim – and satisfied.
She wasn’t willing to waste her time on bad-tasting diet foods as she struggled to find ways to maintain her waistline.
Now that she knows what it takes to keep her stomach satisfied, there’s no going back to boring meal times.
“Check out these healthy nachos. Let me show you how I made one of my favorite new healthy recipes,” said Jacinda Keronga (@jacindakeronga) as she showed off the delicious-looking dish.
This cook who encourages others to find their own veggie fix, credits her cauliflower nachos to her more fit physique.
“I recently lost 100 pounds by learning how to feed myself finally for health and wellness which really just included adding more veggies and protein into my diet.”
Not willing to settle strictly for salads, she sought out a way to find tastier – and less fattening – options.
She dived right into a cooking demonstration of her more satisfying nachos – which also included beef – by cutting up cauliflower florets.
“It is quite filling so usually about half of the cauliflower is enough for one person,” she described of the portion size.
Healthy cooking hacks sometimes take a village – and Jacinda happily incorporated her friend’s advice to add half a cup of Greek yogurt mixed with half a packet of taco seasoning.
Intended to make the cauliflower a bit softer – and add extra flavor – Jacinda did not hide her feelings about the added step: “I absolutely love it.”
Packed with an extra dose of protein, she believed the cauliflower coating to be a “win-win.”
Before the mixing magic happened, she placed the cauliflower itself into an air fryer set on 400 for about ten minutes.
She then added some toppings – including ground beef which was also cooked in taco seasoning – to the now-crispy cauliflower.
Other colorful additions included red onions, tomatoes, green olives, and mozzarella cheese.
The almost-ready – and low-calorie – concoction went back into the air fryer at the same temperature for another five minutes.
Cooked to perfection, her final scrumptious step included pouring salsa to the top – though other home chefs were invited to add their own favorite additions.
The health-conscious chef found some fans of her favorite recipe.
One such follower couldn’t contain her excitement to make the treat for herself: “This looks amazing, going to try it!”
“Let me know what you think,” said Jacinda who was eager to hear how others enjoyed her helpful tips.
Jacinda had only one – or four things – to say about her nutritious meal: “It is so delicious, so filling, so yummy, and tastes so good.”
She also explained how the fast and easy meal was an example of adding veggies into your diet when you find an interesting way of eating them.
